Vitamin B1 (a.k.a. Thiamine)
B1 is a coenzyme, which serves as a catalyst in carbohydrate metabolism in the Kreb’s cycle, enabling simple sugars to release their energy. B1 also aids in the synthesis of neurotransmitters. Healthy sources of B1 include leafy green vegetables, whole cereals, wheat germ, berries, nuts and legumes. Rice, for example, in its natural state, is rich in B1; however, milling removes most of this vitamin. White flour and polished white rice are lacking in B1. A plentiful supply of B1 has a calming and focusing effect on the nervous system.
