On food labels, take cheese crackers for instance, it says there are 20 grams of carbs and underneath it says less than 1 gram fiber and less than 1 gram sugar. What accounts for the other 18 grams of Carbs?

Refined carbohydrate - basically white flower - carbs with all the nutrients stripped out by the refining process. This is present in an overwhelming amount of commonly consumed foods and accounts for the degree of obesity and diabetes in the U.S. It is the "junk" in junk food.
