Bromelain Print E-mail
by Ron Kennedy, M.D., Santa Rosa, CA

Dr. Kennedy Bromelain is a proteolytic enzyme preparation isolated from the pineapple stem. The broad substrate specificity of Bromelain enables the enzyme to easily and efficiently hydrolyze most soluble proteins. Casein, hemoglobin, gelatin, soya, fish, and other proteins are hydrolyzed to lower molecular weight peptides and amino acids which are soluble in trichloroacetic acid. Bromelain has been widely used as an alternative method of combating cancer. Some of its features are that it eliminates the "gluten complex," (especially useful for people with wheat allergy), it reduces or eliminates sulfites, and it has a wide range of effective pHs (acid-base levels) and temperatures.
